Hey you health nuts...I need some help! I wanna start eating healthy for the summer, but I don't really know where to start. Any suggestions?

My Personal Favorite is Chicken Salad.Without the onions.Or A Classic PB & J sandwich.I usually eat CASHEW Butter and Blackberry Jelly.Cashew Butter is great!And you could take a walk to your local Subway and get a 6 inch or a footlong.

fresh ingredients

The secret to great healthy recipes is using fresh ingredients and processing them the least amount possible. For example, instead of frying, sautee or grill your vegetables. Better yet, eat them raw in a salad or steam them (the least contact with water so they don't lose their nutrients). Use a lot of fresh fruits, and add spices to spice up dishes.

I made my own burger the other day and I ground fresh chicken breast using a food processor, and then added diced garlic, italian seasoning, black pepper, and other spices. Then, I mixed in (by hand) chopped bell peppers, onions, and apple cubes (they add moisture and a nice bite). This recipe doesn't use eggs or bread crumbs and the natural viscosity of fresh ground meat helps the mixture sticks together.

I used a grillpan to cook the burger. First, use a napkin to rub a bit of oil onto the grill (or PAM). Then, wash your hands and take a fist-sized or smaller portion of the meat and shape it into a burger. Grill the first side for at least 5 minutes or until the bottom half looks white. Turn over and grill the other side for 3-4 minutes. Add a slice of cheese on top--you deserved it--or not.

To build the burger, try using a whole wheat bun, place strips of romaine lettuce (iceberg is not as dark and thus has fewer nutrients) or even raw spinach on either side of the bun (this keeps the bun dry too), put a slice of tomato on either side if you like it, place the burger on one side, and then add your condiment of choice directly on top of the burger (mustard, ketchup, relish, etc--try to stay away from mayo since it adds extra fat (the bad kind) that you body just doesn't need).

As you can see, there is so much opportunity to personalize this dish.

Don't forget the drinks! These days, individuals get as much calories from drinks as they do from meal. So don't go for a can of Pepsi or Coke to accompany you burger. Instead, try orange juice or a 100% grape juice. Better yet, stick to water. You'll be less dehydrated.

You know, too much of ANYTHING can harm you. I'm sure that sugar, cholesterol, sodium, and any other nutrients you can ingest share the same property:

That they're necessary in small amounts, dangerous in large amounts.

So I figure that your daily activity level and general eating patterns are far more important than how much sodium your food has in it.

Sodium can cause high blood pressure, which can lead to heart attacks and kidney damage. Don't eat too much off it, so dont add extra salt to food if you can avoid it.

Normally I hate veggies but I like carrots with ranch dressing, or broccoli with melted cheese on top. And Matt, I too prefer fruits over veggies.

I love warm soft cauliflower!!!
I bet that would be good with coconut milk and curry powder added to it.

...except I would use vege broth instead of chicken... those poor chickens have a pretty crappy entire life before we kill them. they sear off their beaks (so they can't hurt eachother trying to move around to get to food/water, and spread their wings) and feed them antibiotics (because it so easy to spread disease so cramped together). Did you know that farmers starve the chickens 30 hours before slaughter because its a "waste" of money?

I used to love mashed potatoes, but eating a big bowl always made me want to fall right asleep. Luckily, my sister showed me how to make cauliflower "mashed potatoes"--tons of vitamins, high fiber, and no more food coma!

Check it out:

1) Cut up a head of cauliflower into small pieces.
2) Throw the pieces into a pot of water or chicken broth and heat it until it boils.
3) Turn the heat down and let the cauliflower simmer until it gets nice and soft.
4) Drain the liquid and dump the softened cauliflower into a food precessor. Add salt, pepper or whatever other seasonings you like to taste. Mash it up until you get the consistency you like best.

And you're done! Very yummy and pretty good for you too...enjoy!

for a quick fill-up, you guys should try chocolate soy milk....i'm lactose intolerant so regular milk doesn't work for me, but soy milk tastes great and fills you up until you get time to eat.

p.s. don't like chocolate, there is vanilla flavored too!

For mashed potato lovers!

To add more nutrition to mashed potatoes try using a variety of root vegetables: sweet potatoes, parsnips, beets, carrots, radish, garlic, onion, different types of potatoes.

Just choose a few of your favorites, clean them, cut them into small pieces, cover with water in a pot, and boil until soft so they're easy to smash.
Drain the water when they're cooked and add a tablespoon or 2 of olive oil and a small amount of soymilk. Continue to smash the vegetables adding small amounts of soymilk until the mixture is the right thickness for your tastes. Add salt and pepper and enjoy!

soups are fun to play with because theres really no rules. I always get better results when I start by sauteeing some minced garlic in olive oil, then adding chopped onion and sautee for a few seconds before adding the water or stock and rest of the ingredients. It adds layers of flavor, but if you're in a hurry it isn't necessary.

Here my recipe for hearty farm-style soup:

(after the 1 Tbs olive oil, 1 clove garlic, and 1/4-1/2 onion..."
add:

2 large vegetable buillion cubes:
smush them into the onions and garlic until a paste is formed.
add 5 cups water. stir.
cover and allow to come to boil. Then reduce heat and simmer.
in the meantime, while you're waiting for the water to boil:
clean and chop 3 lg stalks celery, 3 large carrots, handful green beans, 1 large tomato, 1 lg russet potato. add these to the water whenever you're done. Season with salt, pepper, oregano, basil, spike, etc... whatever you like.
Allow soup to simmer for 30 minutes or until vegetables are cooked through.

To make it even easier you can use frozen veges instead. Then theres no chopping or clean-up involved!

It isn't summer anymore, so does anybody have some good cold-weather recipes to share??
Here are a few of mine...

A simple, healthy meal or appetizer:

Bean Dip Supreme

You can substitute ingredients as much as you'd like or change the amounts... but heres the basic idea.

1 can fat-free (vegetarian) refried beans or pinto beans
1 small can mushrooms
1 Tbs olive oil
salt
pepper
oregano
basil
1 small can diced tomatoes with green chiles, or 1/2-3/4 c salsa of your choice
1 avacado or 1/2-3/4 c guacamole
tortilla chips or tortillas

Spread beans in the center of a microwave safe plate.
Drain mushrooms completely. add olive oil, salt, pepper, basil, and oregano (to taste) to mushrooms.
Spread mushroom mixture on beans.
Spread tomatoes on mushrooms.
Lightly cover (to keep from splattering) and microwave until bubbling all over.
Top with smashed avacado.
Eat with tortilla chips.

I like to make a tuna salad! Make a nice bed of greens, cucumbers and tomatoes and put a can of tuna on it. Just add some balsamic vinager and olive oil. It is delish!

If I'm in a healthy mood but craving popcorn, I LOVE edamame beans!! They're soy beans that you simply boil until they all rise to the surface of the water and then you can season them with anything you like! I like corn oil and salt; corn oil isn't really bad for you-unlike hydrogenated oil or soy bean oil-and with a little bit of salt, it tastes a lot like popcorn!

I like to fill a blender with crushed ice, milk/water, a fruit (like strawberries or blueberries), and some creatine and eat it on the way to the gym. Creatine and milk just tastes NASTY, you have to jazz it up!

I don't have the exact recipe but you could try and make a fruit pizza or a lofat trifle for a special and healthy dessert.For a trifle, buy lowfat shortcake, sugarfree pudding, lowfat whipped cream and a bunch of berries, or your favorite fruit. Layer them anyway you want and chill it for a while. For a fruit pizza try and make a sort of pie. you can buy lowfat ready made dough and lowfat whipped cream. top it with any fruit you like. You don't even have to bake these! Have fun and get creative!

This idea is sure fire! Take some peanuts and brown them. then mix with other nuts and bananas and stuf. It's awesomely good

I don't eat meat, so I originally tried Schnieders 'Meatless Solutions' as a way to get my daily nutrients, but after I started comparing nutrition facts, meatless alternatives are so much healthier than regular meat, and they almost taste the same as well!

X( hMy favorite healthy dessert is sugar free pudding parfaits!!! (they are almost sugar free)

My mom puts one layer of sugar free chocolate pudding then lite cool whip then a layer of sugar free butterscotch pudding then more cool whip and then a final layer of chocolate pudding. My mom and I are nut fans so we also add crushed peanuts at the top for the added benefits of nuts to our dessert, but they are optional.

My dad even ate this dessert before he knew it was sugar free and he doesn't really like healthy desserts!!!

Another one of my faves are no bake cookies made with cocoa, quick oats, and peanut butter. My mom tweaked the recipe and made it healthier by adding barely any butter and less sugar. Also, use the natural peanut butter without hydronated oils because these oils are really bad for your health.

i add pine nuts and dried cranberries to every salad i make. when you add "exotic" ingredients like this, people always think "wow." it is a quick and easy (and not too expensive) way to make a bag of greens seem sort of sexy.

Bagels are great. To get really good ones, go out of your way to buy them from a local bagelry or a place that makes them fresh, instead of the supermarket. and dont be afraid to try some whole wheat, rasin, or whatever sounds good, instead of plain. And dont just load them down with butter. i like cream cheese and jelly or peanut butter and honey, two great combinations that taste great and are good for your body.

my dad is a vegitarian so healthy food comes naturally to me. My word of advice to all who want to eat healthier: dont treat it like a chore. Healthy food can be really delicious if you just keep an open mind about it all. There are so many possibilities, so no one should feel bound to a strict guide of what food to eat. Explore and find out what healthy food tastes best to you, you'll be surprized how many foods taste great, and make you feel great about yourself. (my personal oppinion on mcdonalds salads is that they're a good idea, but keep in mind they are still filled with all sorts of preservatives and are not the freshest and best tasting veggies out there.)

oh and another thing. Don't trust anything at mcdonalds and other fast food places other than the pure fruit salads and parfaits and organic stuff. Anyother salad with meat and stuff, is either fried or with trans fat and trans fat is bad.

OOHHH!!! eat salmon, that is good and you can do anything with it. It is very good for you. All you need to do is put spiced like dill and tyme, salt and pepper and you're good. Oh, and whole wheat crackers. They go good with any dip too. Just get healthy foods that multitask. Healthy food that can go with anything. Small changed like putting grilled veggies in lasagna, instead of meat. Or eating a sandwich with whole wheat bread. Make small changes in eerything you eat can create a whole bunch of variety, that you can never be bored!Laughing out loud

i love this dip called hummus. it's made of chick peas and you eat it with pita bread or anything you want. it's pretty much the best thing i've ever tasted and easy to make. you can find recipes anywhere and tweak them yourself. i got my recipe on the Food Channels website. the recipe is:

Ingredients
4 garlic cloves
1 teaspoon salt
2 (1-pound 3-ounce) cans chick-peas
2/3 cup well stirred tahini
1/4 cup fresh lemon juice, or to taste
1/2 cup olive oil, or to taste
1/2 cup water (i use the juice from the can)
Toasted pita thins

Directions
On a cutting board mince and mash the garlic to a paste with the salt.
In a food processor puree the chick-peas with the garlic paste, the tahini, the lemon juice, 1/4 cup
of the oil, and 1/2 cup water, scraping down the sides, until the hummus is smooth and add salt to taste. Add water, if necessary, to thin the hummus to the desired consistency and transfer the
hummus to a bowl. In the food processor, cleaned, puree the remaining 1/4 cup oil with the parsley
until the oil is bright green and the parsley is minced transfer the parsley oil to a small jar. The
hummus and the parsley oil may be made 3 days in advance and kept covered and chilled. Divide the
hummus between shallow serving dishes and smooth the tops. Drizzle the hummus with the parsley oil
and sprinkle it with the pine nuts. Serve the hummus with the pita.

This recipe makes a lot so you can half it or something. you don't have to do the fancy stuff either, it's faster that way.

I like their Asian salad, with the Mandarin oranges (since I prefer fruit to vegetables). The thing I have with salads is the lettuce - most places just use crappy ol' iceberg lettuce that tastes terrible. If you can FIND a salad like yours conveniently, great. I have to stick with what's in my fridge - so I end up heating up a hot dog, or maybe making a roast beef sandwich. (On the other hand, roast beef is AWESOME.)

These are some awesome ideas! What kinds of salad do you guys like best? My favorite always changes, but right now I mediterranean salads with mixed greens, olives, red onions, cucumbers, green and red peppers, and then white balsamic dressing. What about you??

You can find a lot of great salads at McDonalds, as well as their Fruit & Yogurt Parfait. My restaurant, Steak n Shake, has salads but they actually aren't as good as Mickey D's. Also, buy a bunch of Ramen noodles (they're like 30c a pack) for late-night snacks.

i wanna eat healthy n stuff this summer 2 but i dont have ne recipes or whateva but i can tell u easy stuff like lots of fruit like strawberries n watermelon mmmm they r so good and i also love vanilla yogurt or cottage cheese with fruit or fruit salads. man there is so much u can do with fruit. lets see what else...oh ya like eat nuts like almonds or peanuts and of course stuff like chicken but not fried! or even u wanna be really healthy then like fish or veggies n stuff well i hope that helps. oh n my fave recipe i think is homemade pizza with corn, pepper, onion spices n cheese sounds weird i kno but its mad good k ttyl
