"Sustainability is living on nature's income rather than living on its capital."
- Murray Gell-Mann, Nobel Prize-Winning Physicist
In the spirit of today's quote we're honoring nature's capital and having a meatless Thursday today! Going meatless once a week can reduce your carbon footprint and save resources like fresh water and fossil fuel. Plus, scientists say you get the added bonus of possibly reducing your risk of chronic conditions like cancer, cardiovascular disease, diabetes, and obesity. Sounds good to us (good enough to forgo a burger once a week at least!) Happy green-Thursday people!
