Since 1975, HIV/AIDS has ravaged sub-Saharan Africa. UNAIDS estimates that in Kenya alone, 700 people a day die of HIV related infection. While enormous in scale, global HIV/AIDS prevention and treatment efforts are limited by issues of poverty, political instability and cultural stigma. Leading research has identified nutrition as an indispensable component for all aspects of HIV/AIDS prevention and treatment. A committed group of eight Cornell students and staff, working closely with a Kenyan NGO in Western Kenya, have identified interactive nutrition education as a critical, cost effective, accessible strategy for aiding HIV/AIDS affected, low-resource communities. Action-oriented nutrition education is particularly crucial in areas of the Bungoma District of Kenya, where treatment options are limited. Unified in combating this critical need, the Project Kenya group works in partnership with Kenyan colleagues to educate, assess and advocate. Ten months of intensive planning and preparation will culminate in a revolutionary four-week nutrition outreach project called ENRCH in rural Kenya, taking place in December 2007 and January 2008. Beyond the project’s service impact, Project Kenya provides its student facilitators with timely and formative experience translating academic learning into practical action, linking the tremendous resources of Cornell University to local understandings and needs.

My project adresses the growing rates of obesity and eating disorders among adolescents today. This project includes a 3 session long class on nutritional education for both parents and children at the Schools of St. Benedict and parish. The 3 session long classes will be held, consecutively, once in the fall, once in the winter, and once in the Spring. Each of the three weeks will cover a different topic on healthy eating habbits. Adults and older kids can go to one room where they will recieve factual information on how to promote healthy eating in their children's, as well as their own, lives. Children can go into another room to work on handouts that help kids make healthy food choices as well as watch educational videos on healthy eating. Each meeting will be an hour and a half long and take place at St. Benedict in the evening. Since they are held three different times out of the year, if you miss one, you can always make up for it the next time it comes around!

Healthy Choices for Baltimore

Healthy Choices for Baltimore is a volunteer-based nutrition education program developed to address the growing epidemic of childhood obesity. The purpose of the project is to offer weekly nutrition education classes to 3rd - 5th grade students in an interactive and engaging manner, in order to initiate healthy lifestyles. Our goal is to entice students to take an active role in choosing a healthy lifestyle by offering exciting ways to incorporate healthy and fun eating and exercise habits. Our program, a Baltimore-based service, strives to introduce some of Baltimore's most vulnerable population to interesting and delicious food options, realistic and achievable exercise choices, and manageable and convenient lifestyle choices.
